Apple & Walnut Porridge Squares

For a balanced and healthy breakfast on the go, or a quick and nourishing snack, these apple and walnut porridge bars won't disappoint!


  • 2 cups oats

  • 3 cups almond milk

  • 1.5 cups chopped apple

  • 1/2 cup walnuts

  • 1/2 cup chopped dates

  • 1/4 cup ground flaxseed

  • 1 tbsp ground cinnamon

  • 1/4 tsp salt

  • 2 tsp vanilla extract

  • 1/3 cup maple syrup (optional)


  1. Preheat your oven to 180c and line a 20cmx20cm square tin with baking parchment.

  2. Place the oats, apple, walnuts, flaxseed, dates, cinnamon and salt in a bowl and mix well.

  3. Make a well in your dry ingredients and pour in the almond milk, vanilla and maple syrup (if using). Mix well.

  4. Pour the mixture into the prepared tin and smooth until flat.

  5. Bake for 25-30 minutes until golden on top and firm to touch.

  6. Allow to cool for 5 minutes and then remove from the tin.

  7. Cut into 16 squares.

  8. The porridge squares can be eaten warm or cold and will keep in an airtight container in the fridge for a few days. Alternatively, store in the freezer for up to 2 months.

Kid-friendly version:

  1. For a kid-friendly version, you can simply grate the apple and omit the nuts. Alternatively, add 1 cup of applesauce instead of the apple and omit 1 cup of liquid.

  2. Cut into small squares for little hands
