Cashew, Lemon & Tahini dressing (oil-free)

This is a great little dressing to have in your recipe archive. It’s creamy, Moorish and incredibly versatile – plus, it’s OIL FREE! Use as a dressing on salads, grains, grilled veggies and Buddha bowls. You can easily adjust the flavouring by switching up which fresh herbs you use.

(makes 1 cup)

Ingredients:

  • ½ cup raw cashews, soaked in water overnight and drained

  • 1/3 cup tahini

  • 1 lemon, juiced

  • 1/3 cup water

  • Salt & pepper to taste

  • Optional: ½ cup fresh coriander

Method:

  1. Add all of the ingredients to a blender and blitz until smooth and creamy. Start with 2 tbsp of water and add up to 1/3 cup depending on desired consistency.

Yep, it’s just that easy!
