Warm Kale & Pumpkin Seed Salad

Today I was feeling like something a little more warming and so opted for lightly steamed winter kale as my base. This is the great thing about having a framework in place to build your everyday meals around.

If you want to know the quickest way back to vibrant health, its focusing on veggies first. No matter how dismal the rest of your fridge is, if you always have some form of green vegetable, you can make a tasty and healthful offering. At my house, we personally like to wait until the organic kale is on offer and stock up. You can just throw it straight into your freezer for use later…now there are no excuses!

Ingredients:

  • 2 hefty cups of kale, lightly steamed

  • ½ cup sweet potato chunks

  • ½ red onion, lightly sautéed

  • 2-3 sun-dried tomatoes, rinsed & chopped

  • 3 tbsp hemp seeds

  • 2 tbsp pumpkin seeds, toasted

  • Dressing: 1 tbsp tamari or liquid aminos & lots of black pepper
