Puy Lentil & Raisin Salad


As much as I love a complex and interesting salad, I don’t always have the time or ingredients to put such a masterpiece together. Instead, for the day to day I need a few simple recipes in my arsenal or else I simply won’t get my salads in.

This is really how I approach my daily salads: always a base of greens & past that, whatever I have on hand! When you don’t have to commit to researching, grocery shopping and lots of dicing and chopping; you don’t stress out & you’re much more likely to give your body the gift of a regular salad.

As long as you always keep a bag of fresh greens in the fridge, some variety of vegetables and maybe some nuts, seeds & legumes in the cupboard, you can create a variety of deliciousness! Take the time to relax and eat it from a pretty plate or simply bonk it all in a container on your way out the door – throw those expectations in the trash & just do what works for you!

Puy Lentil & Raisin

-A very healthy handful of mixed greens – spinach & watercress was what I had!

-Cherry tomatoes

-½ cup puy lentils (from a Merchant Gourmet sachet – I always have one in my cupboard & stock up when they’re on offer)

-1/4 cup toasted pumpkin seeds (you can toast & store seeds in batches to make things even speedier!)

-1 spring onion, finely chopped

-2 tbsp raisins

Dressing: 1 tbsp EVOO, 1 tbsp balsamic vinegar, 1 tsp raw honey, 1 tsp nigella seed, salt & pepper to taste.

If you’re super prepared you can marinade the lentils & raisins in the dressing the night before – ooh momma is it good!
